Eggplant BLISS

Just recently, I tried this recipe and let me tell you...This is easy to love. Try it out for yourself!

Ingredients

  • 10 oz 2 cups cherry tomatoes

  • 1/4 cup Basil, packed fresh leaves

  • 1 Eggplant (about 1 1/2 pounds), large

  • 1 Pinch Red-pepper flakes

  • 1 Salt, Coarse

  • 1 tbsp Olive oil, extra-virgin

  • 1/4 cup Pine nuts, toasted

  • 1 oz Feta cheese
